The rise in popularity of sourdough

Sourdough has seen one of the most significant rises in popularity of any bread during recent years.

In April, 2022, 57% of Craft Bakers Association (CBA) members sold up to three sourdough products, however, the figure increased to 64% by the end of the year, with a further 10% planning to introduce sourdough products.

Lockdown love for sourdough

One of the ‘benefits’ of Covid-19, and the subsequent lockdowns, we all faced across the world, was that people were forced to stay at home and try new hobbies. Baking took off and worldwide people started making their own sourdough.

Amateur bakers now had time to let the sourdough ferment and were able to experiment with various flavours too. It created a great appreciation of the time and dedication put into making a sourdough loaf. This has continued even after lockdowns have long gone, as people remember their time baking fondly. But now they have less spare time, they pick up a loaf when they are shopping instead.

Importance of flavour

A recent study by the CBA found that 53% of bakers said that flavour is the most appealing factor when choosing sourdough.

Healthier perception

Many customers also perceive sourdough as being healthier than normal breads. Customers associate it with a more natural, artisanal way of baking and are able to enjoy a good quality, baked item that’s a little healthier. You can read all about how sourdough bread can be good for you here.
